

What are Garlic Scapes?
Garlic scapes are the tender stem and flower bud of a hardneck garlic plant. (Hardneck garlic is the kind of garlic that typically grows in northeastern U.S. and Canada). Scapes first grow straight out of the garlic bulb, then coil. When harvested, they look like long, curly green beans.
What to do with Scapes
You can use scapes in all sorts of ways. Less pungent than garlic cloves, they provide subtle garlicky flavor and can be served cooked or raw. There are many sites out there with tips and tricks for using scapes. Just search on "What to do with garlic scapes".
How To Store Garlic Scapes
Scapes couldn't be more low-maintenance. They rarely have a speck of dirt on them, and they will keep for weeks (even months!) tucked in a bag in your vegetable drawer. Before using them, cut off the stringy, fibrous tip from the flower end, and trim off the very bottom of the stem.
